After a bunch of reports, Samsung has now acknowledged the issue, attributing it to potential incompatibility between the One UI 7.0 and certain versions of Android Auto.

To collect accurate log data, submit the report within 15 minutes of reproducing the issue.
Unfortunately, there seems to be no temporary workaround to this problem. All you can do is install the latest version of Android Auto.
